Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

In a saucepan, melt the butter, golden syrup, and caster sugar over low heat. Stir until the sugar has dissolved.

Remove from heat and add the plain flour, double cream, mixed dried fruit, and salted peanuts. Stir well to combine.

Drop spoonfuls of the mixture onto the prepared baking tray, leaving space between each one. Flatten each spoonful with the back of a spoon.

Bake in the preheated oven for 10-12 minutes, or until golden brown.

Remove from the oven and let the Florentines cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.

Once the Florentines have cooled, melt the dark chocolate in a heatproof bowl over simmering water. Stir until smooth.

Dip the flat side of each Florentine into the melted chocolate, allowing any excess to drip off. Place them back on the wire rack.

Leave the Florentines to set at room temperature for about 30 minutes, or until the chocolate has hardened.
