  1. Preheat the oven to 180°C.
  2. In a bowl, mix the flour and sugar. Add the butter and rub it into the flour mixture until it resembles breadcrumbs.
  3. Add the egg yolk and vanilla extract. Mix until the dough comes together.
  4. Roll out the dough on a floured surface and cut out circles to fit your tartlet molds.
  5. Place the dough circles into the molds and press gently to fit.
  6. Fill each tartlet with a tablespoon of jam.
  7. Bake in the preheated oven for 15 minutes or until the tartlets are golden brown.
  8. Remove from the oven and let cool before serving.
