In a mixing bowl, cream together the butter and caster sugar until light and fluffy.

Add the egg and vanilla extract to the bowl and mix well.

Gradually add the self-raising flour to the mixture and stir until combined.

Roll tablespoonfuls of the dough into balls and place them on the prepared baking tray.

Use your thumb or the back of a spoon to make an indentation in the center of each dough ball.

Fill each indentation with a teaspoon of jam.

Bake in the preheated oven for 10-12 minutes or until the edges are golden.

Allow the jam drops to cool on the baking tray for a few minutes, then transfer them to a wire rack to cool completely.
