Preheat the oven to 325°F (163°C).

In a saucepan, combine sugar and water over medium heat. Cook and stir until the sugar dissolves and turns into a caramel color.

Pour the caramel into four ramekins, swirling to coat the bottoms evenly.

In a mixing bowl, whisk together espresso, Irish cream liqueur, vanilla extract, eggs, milk, whipping cream, and salt.

Pour the mixture into the ramekins with the caramel.

Place the ramekins in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins.

Bake for 40-45 minutes or until the custard is set.

Remove the ramekins from the water bath and let them cool to room temperature.

Refrigerate for at least 2 hours or overnight.

To serve, run a knife around the edges of the ramekins and invert onto serving plates.
