Preheat the oven to 400°F (200°C).

Wash and scrub the potatoes, then slice off the top of each potato.

Use a spoon to scoop out the inside of each potato, leaving a small rim around the edges.

Place the hollowed-out potatoes on a baking sheet and bake for 20 minutes.

Remove the potatoes from the oven and carefully crack an egg into each potato.

Sprinkle the shredded cheddar cheese, crumbled bacon, and chopped green onions over the eggs.

Season with salt and black pepper to taste.

Return the potatoes to the oven and bake for an additional 10 minutes, or until the eggs are cooked to your liking.
