In a saucepan, combine honey, sugar, and water. Heat over medium heat, stirring constantly, until the mixture reaches 150°C (300°F) using a candy thermometer.

Meanwhile, beat the egg white in a separate bowl until stiff peaks form.

Slowly pour the hot syrup into the beaten egg white while continuing to beat.

Add almonds, pistachios, vanilla extract, cornstarch, and butter. Mix well.

Line a baking dish with parchment paper and pour the nougat mixture into it.

Let it rest at room temperature for 2 hours until set.

Once set, cut the nougat into pieces and serve.
