  1. Preheat the oven to 375°F (190°C). Grease and flour the madeleine molds.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream together the butter, granulated sugar, and honey until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract and lemon zest.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spoon the batter into the prepared madeleine molds, filling each about 3/4 full.
  7. Bake for 8-10 minutes, or until the madeleines are golden brown around the edges and spring back when lightly touched.
  8. Remove from the oven and let the madeleines cool in the molds for a few minutes.
  9. Transfer the madeleines to a wire rack to cool completely.
  10. Dust with powdered sugar before serving.
