  1. Preheat the oven to 180°C (350°F). Grate the carrots and chop the dates. In a large bowl, mix the flour, baking powder, cinnamon, and salt. In a separate bowl, whisk the eggs, honey, vegetable oil, and milk. Add the grated carrots and chopped dates to the wet mixture. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Spoon the batter into muffin cups, filling each about 2/3 full. Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool for 10 minutes before removing from the pan. Enjoy!
