Honey-Caramel Tart with Apricots and Almonds

Preheat the oven to 180°C (350°F).

Roll out the pastry dough and line a tart pan with it.

Prick the bottom of the dough with a fork and blind bake for 10 minutes.

In a saucepan, melt the butter, sugar, and honey over medium heat until caramelized.

Remove from heat and stir in the heavy cream.

In a separate bowl, whisk the eggs, vanilla extract, and salt together.

Slowly pour the caramel mixture into the egg mixture, whisking constantly.

Arrange the apricots and almonds on the pre-baked tart crust.

Pour the caramel mixture over the apricots and almonds.

Bake for 30 minutes or until the tart is set.
