Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Add the vanilla extract and mix well.

Gradually add the flour and salt, mixing until just combined.

Shape the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with the back of a spoon.

Bake for 10-12 minutes, or until the edges are golden brown.

In a separate bowl, mix together the shredded coconut and sweetened condensed milk.

Spoon a small amount of the coconut mixture onto each cookie and press it down gently.

Drizzle caramel sauce over the coconut layer.

Melt the semi-sweet chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.

Dip the bottom of each cookie into the melted chocolate, then place them on a wire rack to set.

Allow the cookies to cool and the chocolate to harden before serving.
