  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Add the flour mixture to the butter mixture alternately with the buttermilk, beginning and ending with the flour mixture. Stir in the red food coloring.
  5. In a small bowl, combine the vinegar and baking soda. Add the vinegar mixture to the cake batter and stir until just combined.
  6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer the cakes to a wire rack to cool completely.
  8. In a medium bowl, beat together the cream cheese, powdered sugar, and heavy cream until smooth and creamy.
  9. Place one cake layer on a serving plate and spread a layer of the cream cheese frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.
  10. Refrigerate the cake for at least 1 hour before serving. Enjoy!
