Heat the milk in a saucepan over medium heat until it reaches 180°F (82°C). Stir occasionally to prevent scorching.

Remove the milk from heat and let it cool to 110°F (43°C).

In a small bowl, mix the yogurt culture or starter with a small amount of the warm milk until smooth.

Pour the yogurt mixture into the remaining warm milk and stir well.

Cover the saucepan with a clean towel and let it sit undisturbed at room temperature for 8 hours or overnight.

After the rest time, the yogurt should be thickened. Transfer it to a container and refrigerate for at least 2 hours before serving.
