Roll the mixture into small balls and flatten them to form patties.

Place the patties on a baking sheet lined with parchment paper and refrigerate for 1 hour.

In a microwave-safe bowl, melt the chocolate chips and vegetable oil in 30-second intervals, stirring in between, until smooth.

Dip each peppermint patty into the melted chocolate, coating it completely.

Place the coated patties back on the parchment paper and refrigerate until the chocolate hardens.
