Milk rice with coconut stuffing, also known as ‘Kiribath’ in Sri Lanka, is a traditional dish often prepared to celebrate special occasions such as New Year or religious festivals.

  1. Wash the rice thoroughly and drain the water.
  2. In a pot, add the washed rice, water, and salt. Cook the rice until it becomes soft and sticky.
  3. In a separate pan, heat the milk and coconut together. Stir continuously until the mixture thickens.
  4. Add sugar and cardamom powder to the milk-coconut mixture and stir well.
  5. Once the rice is cooked, remove it from the heat and let it cool slightly.
  6. Take a small portion of the cooked rice and flatten it in your hand.
  7. Place a spoonful of the milk-coconut mixture in the center of the flattened rice.
  8. Fold the rice over the filling, shaping it into a small ball.
  9. Repeat the process until all the rice and filling are used.
  10. Let the rice balls rest for about 10 minutes.
  11. Serve the homemade milk rice with coconut stuffing and enjoy!
