Milk rice, also known as ‘kiribath’, is a traditional Sri Lankan dish commonly served during special occasions and festivals.

  1. Rinse the rice thoroughly and drain.
  2. In a large pot, combine the rice, coconut milk, water, salt, cinnamon stick, and cardamom pods.
  3. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  4. Simmer for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid.
  5. Remove the pot from the heat and let the rice rest for about 10 minutes.
  6. In a small pan, heat some oil and fry the cashew nuts and raisins until they are golden brown.
  7. Serve the milk rice hot, garnished with the fried cashew nuts, raisins, and desiccated coconut.
