Zest and juice the Meyer lemons.

In a heatproof bowl, whisk together the lemon zest, lemon juice, eggs, and sugar.

Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water.

Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon, about 10 minutes.

Remove the bowl from the heat and stir in the butter until melted.

Let the lemon curd cool for about 30 minutes, then transfer it to a jar or container.

Refrigerate for at least 2 hours before serving.
