In a small bowl, dissolve yeast and sugar in warm water. Let it sit for 5 minutes.

In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

Stir until the dough comes together. Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.

Preheat the oven to 425°F (220°C). Punch down the dough and divide it into 6 equal portions. Shape each portion into a long roll.

Place the rolls onto a baking sheet lined with parchment paper. Cover with a kitchen towel and let them rest for 15 minutes.
