Grate the potatoes and onion. Squeeze out excess moisture.

In a large bowl, mix the grated potatoes, onion, eggs, flour, salt, and black pepper.

Heat vegetable oil in a frying pan over medium heat.

Drop spoonfuls of the potato mixture into the hot oil and flatten with a spatula.

Fry until golden brown on both sides.

Remove from the pan and drain on paper towels.

Serve hot with sour cream or applesauce.
