In a large pot, heat olive oil over medium heat. Add chopped onions, minced garlic, sliced carrots, and sliced celery stalks. Cook until vegetables are tender.

Add barley, mixed beans, vegetable broth, tomato paste, bay leaves, thyme, salt, and black pepper. Stir well.

Bring the soup to a boil, then reduce heat and simmer for 45 minutes, or until barley is tender.
