  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23cm) springform pan.
  3. In a separate bowl, beat the cream cheese, Greek yogurt, honey, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Fold in the diced apples. Pour the mixture over the crust in the springform pan.
  5. Bake for 40 minutes or until the center is set and the top is lightly browned. Remove from the oven and let it cool in the pan for 10 minutes.
  6. Run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the pan and let the cheesecake cool completely.
  7. Drizzle caramel sauce over the top of the cheesecake and sprinkle with chopped pecans.
  8. Refrigerate for at least 2 hours before serving.
