Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.

In a separate bowl, mix together the applesauce, honey, coconut oil, almond milk, lemon zest, lemon juice, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Gently fold in the blueberries.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
