  1. Preheat the grill to medium-high heat.
  2. Brush the corn with olive oil and season with salt and black pepper.
  3. Grill the corn for about 10 minutes, turning occasionally, until charred and tender. Remove from the grill and let it cool.
  4. Meanwhile, prepare the mango salsa by combining diced mango, diced red onion, diced red bell pepper, chopped cilantro, lime juice, olive oil, salt, and black pepper in a bowl. Mix well.
  5. Once the corn is cool enough to handle, cut the kernels off the cob.
  6. Slice the Brie cheese into thick slices.
  7. Brush the Brie cheese slices with olive oil.
  8. Grill the Brie cheese slices for about 2 minutes on each side, until softened and grill marks appear.
  9. Remove the Brie cheese from the grill.
  10. To serve, place grilled Brie cheese slices on a plate, top with grilled corn kernels, and spoon mango salsa over the top.
  11. Garnish with additional cilantro if desired.
