  1. Preheat the oven to 180°C (350°F).
  2. Crush the digestive biscuits into fine crumbs. Mix the crumbs with melted unsalted butter. Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the green tea powder and mix well.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the whipping cream, vanilla extract, and lemon juice.
  5. Dissolve the gelatin powder in hot water and let it cool slightly. Add the gelatin mixture to the cream cheese mixture and mix until well combined.
  6. Pour the mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. Remove from the oven and let it cool in the pan for 10 minutes. Then, remove the sides of the springform pan and let the cheesecake cool completely.
  9. Refrigerate for at least 2 hours or overnight before serving.
  10. Serve chilled and enjoy!
