Grasshopper Brownies

Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.

In a microwave-safe bowl, melt the butter and let it cool slightly.

In a large mixing bowl, combine the melted butter, granulated sugar, and vanilla extract. Mix well.

Add the eggs one at a time, mixing well after each addition.

In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the chocolate chips.

Pour the batter into the prepared baking dish and smooth the top.

Bake for 25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

While the brownies are baking, prepare the mint frosting. In a mixing bowl, combine the powdered sugar, mint extract, green food coloring, and heavy cream. Mix until smooth.

Once the brownies are done baking, remove them from the oven and let them cool completely in the baking dish.

Once cooled, spread the mint frosting evenly over the top of the brownies.

Garnish with mint leaves.

Refrigerate for at least 30 minutes to allow the frosting to set.
