  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  7. Roll out one disk of dough on a lightly floured surface to about 1/8 inch thick.
  8. Using a round cookie cutter, cut out circles from the dough.
  9. Place half of the circles onto a baking sheet lined with parchment paper.
  10. Spoon a small amount of jam onto the center of each circle.
  11. Top with another circle of dough and press the edges together to seal.
  12. Repeat with the remaining dough and jam.
  13. Bake for 12-15 minutes, or until the cookies are lightly golden.
  14. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
