Grandmom’s Irish Potatoes
Despite the name, Grandmom’s Irish Potatoes is actually an American dish that originated in Pennsylvania Dutch country and is commonly enjoyed during St. Patrick’s Day.

Peel and cut the potatoes into chunks.

Boil the potatoes until tender, then drain.

In a separate pan, melt the butter and sauté the finely chopped onion until translucent.

Mash the potatoes and add the sautéed onion, milk, cheddar cheese, salt, pepper, and parsley. Mix well.

Transfer the mixture to a greased baking dish and bake at 350°F (175°C) for 30 minutes.

Let it rest for 10 minutes before serving.
