Golden Potato Pancakes
Potato pancakes, also known as latkes, are a traditional dish in many Eastern European cuisines and are often associated with Hanukkah.

Peel and grate the potatoes. Place them in a clean kitchen towel and squeeze out any excess moisture.

Finely chop the onion.

In a large bowl, combine the grated potatoes, chopped onion, egg, all-purpose flour, salt, and black pepper. Mix well.

Heat vegetable oil in a large non-stick skillet over medium heat.

Spoon about 1/4 cup of the potato mixture into the skillet and flatten it with the back of a spoon to form a pancake.

Cook for 3-4 minutes on each side, until golden brown and crispy.

Remove the pancakes from the skillet and place them on a paper towel-lined plate to drain any excess oil.

Repeat with the remaining potato mixture, adding more oil to the skillet as needed.

Serve the golden potato pancakes hot with sour cream or applesauce.
