  1. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt. Set aside.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the molasses, egg, and vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  5. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. On a lightly floured surface, roll out the dough to about 1/4 inch thickness. Use gingerbread people cookie cutters to cut out shapes. Place the cookies onto the prepared baking sheets.
  7. Bake for 8-10 minutes, or until the edges are lightly browned. Remove from the oven and let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  8. In a small bowl, whisk together the icing sugar with a little water until smooth. If desired, add food coloring to the icing. Decorate the cooled cookies with icing as desired.
  9. Allow the icing to set before serving. Enjoy!
