Gingerbread Men
Gingerbread men are a popular treat during the holiday season and are often decorated with icing to resemble people.

In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt.

In a large bowl, cream together the butter and brown sugar until light and fluffy.

Beat in the molasses, egg, and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Divide the dough in half and wrap each half in plastic wrap. Chill in the refrigerator for at least 1 hour.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Roll out the chilled dough on a lightly floured surface to about 1/4 inch thickness.

Use gingerbread man-shaped cookie cutters to cut out shapes from the dough.

Place the cut-out cookies onto the prepared baking sheet and bake for 8-10 minutes, or until lightly golden brown.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
