  1. In a bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt. Set aside.
  2. In a separate bowl, cream together the butter and brown sugar until light and fluffy. Add the molasses, egg, and vanilla extract, and mix until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. On a lightly floured surface, roll out one portion of the dough to a 1/4-inch thickness. Use gingerbread man-shaped cookie cutters to cut out shapes, and transfer them to the prepared baking sheet. Repeat with the remaining dough.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
