  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat together the eggs, vegetable oil, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing well.
  4. Peel and core the apples, then cut them into thin slices.
  5. Spread half of the batter into the prepared cake pan. Arrange half of the apple slices on top. Sprinkle with half of the powdered sugar.
  6. Repeat with the remaining batter, apple slices, and powdered sugar.
  7. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Dust with additional powdered sugar before serving, if desired.
