  1. In a medium bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt. Set aside.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Add the egg, molasses, and vanilla extract. Mix well.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until combined. The dough will be thick.
  4. Divide the dough in half and shape each half into a disc. Wrap in plastic wrap and refrigerate for at least 1 hour.
  5. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. On a lightly floured surface, roll out one disc of dough to about 1/4-inch (6 cm) thickness. Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets.
