  2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Add the molasses, egg, and vanilla extract, and mix well.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  5. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. On a lightly floured surface, roll out the dough to 1/4-inch (6 cm) thickness. Use cookie cutters to cut out desired shapes.
  7. Place the cut-out cookies onto the prepared baking sheets, spacing them about 2 inches (5 cm) apart.
  8. Bake for 8-10 minutes, or until the edges are lightly browned.
  9. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  10. Decorate the cooled cookies with icing or enjoy as is.
