Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together the flour, ginger, cinnamon, baking powder, and salt.
  3. In a separate large bowl, mix together the melted butter, brown sugar, and molasses. Add the eggs one at a time, mixing well after each addition.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until well combined.
  5. Pour the batter into the prepared pan and spread it evenly. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 5 minutes. Then, transfer it to a wire rack to cool completely.
  7. Once the cake is completely cooled, spread a layer of whipped cream evenly over the surface.
  8. Starting from one short end, carefully roll the cake into a log shape. Place the log seam-side down on a serving platter.
  9. In a small bowl, mix together the powdered sugar and cocoa powder. Dust the log with the mixture to resemble bark.
  10. Garnish with crushed candy canes on top. Refrigerate for at least 1 hour before serving.
