Ingredients
Instructions
-
Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
-
In a bowl, whisk together the flour, ginger, cinnamon, baking powder, and salt.
-
In a separate large bowl, mix together the melted butter, brown sugar, and molasses. Add the eggs one at a time, mixing well after each addition.
-
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until well combined.
-
Pour the batter into the prepared pan and spread it evenly. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
-
Remove the cake from the oven and let it cool in the pan for 5 minutes. Then, transfer it to a wire rack to cool completely.
-
Once the cake is completely cooled, spread a layer of whipped cream evenly over the surface.
-
Starting from one short end, carefully roll the cake into a log shape. Place the log seam-side down on a serving platter.
-
In a small bowl, mix together the powdered sugar and cocoa powder. Dust the log with the mixture to resemble bark.
-
Garnish with crushed candy canes on top. Refrigerate for at least 1 hour before serving.
