Ginger Cookies
Ginger cookies, also known as gingerbread cookies, have a long history and are often associated with holiday traditions, especially during Christmas time.

Preheat the oven to 350°F (175°C).

In a large bowl, cream together the butter and brown sugar until smooth.

Beat in the egg and molasses.

In a separate bowl, combine the flour, baking soda, ginger, cinnamon, cloves, and salt.

Gradually add the dry ingredients to the creamed mixture and mix well.

Roll the dough into small balls, about 1 inch in diameter.

Roll the balls in granulated sugar to coat.

Place the coated balls onto ungreased baking sheets, spacing them about 2 inches apart.

Bake for 8-10 minutes, or until set.

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
