  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9x9-inch baking pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, ground ginger, all-purpose flour, ground cinnamon, and ground nutmeg until well combined.
  4. Pour the cream cheese mixture over the crust in the baking pan. Smooth the top with a spatula.
  5. Bake for 30 minutes or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let cool in the pan for 2 hours.
  7. Refrigerate for at least 2 hours or overnight.
