Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt.

Cut in the unsalted butter until the mixture resembles coarse crumbs.

Press half of the mixture into the bottom of a greased baking dish.

In a separate bowl, mix together the shredded coconut, chopped cherries, egg, and vanilla extract.

Spread the cherry and coconut mixture evenly over the crust.
