  1. In a bowl, mix the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. Add the egg yolks and vanilla extract. Mix until the dough comes together.
  3. Divide the dough into 6 equal portions and press each portion into a tartlet tin.
  4. Preheat the oven to 180°C (350°F) and bake the tartlet shells for 12-15 minutes, or until golden brown.
  5. Let the tartlet shells cool for 10 minutes, then remove them from the tins.
  6. Fill each tartlet shell with assorted fruits.
  7. Sprinkle powdered sugar over the tartlets before serving.
