Fruit tarts have been enjoyed since ancient times, with evidence of similar pastries dating back to ancient Egypt.

  1. In a food processor, combine flour, powdered sugar, and salt. Add cold butter and pulse until mixture resembles coarse crumbs.
  2. Add egg yolks and vanilla extract. Pulse until dough comes together.
  3. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out the dough on a lightly floured surface and transfer to a tart pan. Press the dough into the pan and trim the edges.
  6. Prick the bottom of the dough with a fork.
  7. Bake the crust for 15-20 minutes, or until golden brown.
  8. Let the crust cool completely.
  9. In a small saucepan, heat apricot jam until melted.
  10. Brush the cooled crust with melted apricot jam.
  11. Arrange fresh fruits on top of the tart.
  12. Refrigerate for at least 1 hour before serving.
