Zucchini is technically a fruit, not a vegetable, as it develops from a flower and contains seeds.

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

Grate the zucchini and squeeze out any excess moisture.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.

In a separate bowl, beat the egg and then add the grated zucchini, vegetable oil, and vanilla extract. Mix well.

Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.

Gently fold in the nuts and dried fruit.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
