  1. Preheat the oven to 375°F (190°C) and line a 9-inch square baking dish with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold cubed butter to the bowl and use a pastry cutter or your hands to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the flour mixture and stir until just combined.
  5. Press the dough into the bottom of the prepared baking dish in an even layer.
  6. Bake for 18-20 minutes, or until the shortcake is golden brown.
  7. Remove from the oven and let cool completely.
  8. Once the shortcake has cooled, spread the frozen peach slices evenly over the top.
  9. Spread the whipped cream over the peaches.
