Frog Eyed Salad
Frog Eyed Salad is a classic American dish that gained popularity in the 1960s. Despite its name, it doesn’t actually contain frog eyes! The name comes from the small Acini di Pepe pasta, which resembles tiny frog eyes when cooked.

Cook the Acini di Pepe pasta according to package instructions. Drain and rinse with cold water.

In a large bowl, combine the cooked pasta, pineapple chunks, mandarin oranges, mini marshmallows, and whipped topping.

In a saucepan, heat the cooking oil over medium heat. Add the vanilla pudding mix, milk, sugar, egg, and lemon juice. Cook until thickened, stirring constantly.

Remove the pudding mixture from heat and let it cool for a few minutes. Then, pour it over the pasta mixture and stir until well combined.

Stir in the crushed pineapple.

Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
