  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add diced onion and minced garlic, sauté until fragrant.
  3. Add diced carrots and cook until slightly softened.
  4. Push the vegetables to one side of the pan, crack in the eggs and scramble them.
  5. Add frozen peas and cooked rice to the pan, mix well.
  6. Pour soy sauce over the rice mixture and stir until evenly coated.
  7. Season with salt and black pepper to taste.
  8. Cook for an additional 2-3 minutes, stirring occasionally.
  9. Remove from heat and let it rest for 5 minutes before serving.
