Pavlova is named after the Russian ballet dancer Anna Pavlova and is a popular dessert in Australia and New Zealand.

  1. Preheat the oven to 120°C (250°F) and line a baking sheet with parchment paper.
  2. In a clean mixing bowl, whisk the egg whites until stiff peaks form.
  3. Gradually add the caster sugar, cornstarch, and white vinegar while continuing to whisk until the mixture is glossy and holds its shape.
  4. Spoon the meringue mixture onto the prepared baking sheet, forming 6 individual pavlovas.
  5. Bake for 90 minutes, then turn off the oven and let the pavlovas cool completely in the oven.
  6. In a separate bowl, whip the cream until soft peaks form.
  7. Gently fold in the icing sugar.
  8. To serve, place a pavlova on each plate, top with whipped cream, and garnish with fresh mixed berries.
