  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the sliced apricots, sugar, and lemon juice. Let it sit for 10 minutes.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Cut the butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.
  5. Stir in the milk and vanilla extract until just combined.
  6. Pour the apricot mixture into a baking dish and sprinkle with ground cinnamon.
  7. Drop spoonfuls of the cobbler batter on top of the apricots.
