Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the sliced apricots, sugar, and lemon juice. Let it sit for 10 minutes.

In a separate bowl, whisk together the flour, baking powder, and salt.

Cut the butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.

Stir in the milk and vanilla extract until just combined.

Pour the apricot mixture into a baking dish and sprinkle with ground cinnamon.

Drop spoonfuls of the cobbler batter on top of the apricots.

Bake for 35-40 minutes, or until the cobbler topping is golden brown and the apricots are bubbling.
