  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2-inch (3 cm) border.
  3. Chop the scooped-out eggplant flesh and set aside.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  5. Add the onion and garlic and cook until softened, about 5 minutes.
  6. Add the chopped eggplant flesh and cook for another 5 minutes.
  7. Stir in the tomatoes, breadcrumbs, Parmesan cheese, parsley, salt, and black pepper.
  8. Cook for 2-3 minutes, until the mixture thickens.
  9. Stuff the eggplant halves with the filling mixture.
  10. Place the stuffed eggplants on a baking sheet and drizzle with the remaining olive oil.
  11. Bake for 35-40 minutes, until the eggplants are tender and the tops are golden brown.
  12. Let the stuffed eggplants rest for 10 minutes before serving.
  13. Serve hot and enjoy!
