  5. Cut the apricots in half and remove the pits.
  6. Arrange the apricot halves on top of the almond mixture.
  7. In a small saucepan, melt the butter.
  8. In a separate bowl, beat the egg and vanilla extract together.
  9. Pour the melted butter into the egg mixture and whisk until well combined.
  10. Pour the butter mixture over the apricots.
  11. Bake in the preheated oven for 30 minutes or until the tart is golden brown.
  12. Remove from the oven and let it rest for 1 hour.
