  1. Peel and chop the potatoes, carrots, leeks, onion, and garlic.
  2. Heat olive oil in a large pot over medium heat. Add the chopped vegetables and sauté for 5 minutes.
  3. Add vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes until the vegetables are tender.
  4. In the meantime, prepare the pistou by blending fresh basil leaves, garlic, olive oil, and Parmesan cheese in a food processor until smooth.
  5. Once the vegetables are cooked, remove the pot from heat and let it rest for 5 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Serve the French Potage hot, topped with a dollop of pistou.
