  1. In a food processor, combine flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs.
  2. In a small bowl, whisk together egg yolks and cold water. Add to the flour mixture and pulse until dough comes together.
  3. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. On a lightly floured surface, roll out the dough into a circle. Transfer to a tart pan and press the dough into the bottom and sides.
  6. Arrange the fresh plums or other fruits on top of the dough.
  7. Bake for 25 minutes or until the crust is golden and the fruits are tender.
  8. In a small saucepan, heat apricot jam until melted. Brush the jam over the fruits.
  9. Allow the tart to cool for 30 minutes before serving.
