  2. In a mixing bowl, crumble the feta cheese and mix it with finely chopped Kalamata olives, diced red onion, chopped fresh parsley, and a pinch of black pepper.
  3. Take one piece of flatbread and spread the feta-olive mixture evenly on top.
  4. Fold the flatbread in half and press the edges to seal.
  5. Brush the top of the flatbread with olive oil.
  6. Place the stuffed flatbread on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the flatbread turns golden brown.
  7. Remove from the oven and let it rest for 5 minutes.
  8. Cut the stuffed flatbread into slices and serve warm.
